Ingredients:
2 lbs beef stew meat, cut into chunks
8 cups beef broth
1 cup rice, uncooked
2 onions, finely chopped
3 garlic cloves, minced
3 tbsp tomato paste
1 tsp dried coriander
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 cup walnuts, ground
1/4 cup fresh cilantro, chopped
1/4 cup fresh dill, chopped
Salt and pepper to taste
Directions:
In a large pot, brown the beef chunks over medium-high heat. Remove the beef and set aside.
In the same pot, sauté onions and garlic until translucent.
Add the tomato paste and spices, stirring for a minute until fragrant.
Return the beef to the pot, add beef broth, and bring to a boil. Reduce heat to a simmer.
