Ingredients:
2 lbs beef chuck, cut into 1-inch cubes
1 large onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup crushed tomatoes
1/2 cup toasted walnuts, coarsely ground
1 tbsp fresh coriander, finely chopped
1 tsp dried marigold petals (optional)
1/2 tsp fenugreek seeds
2 bay leaves

Directions:
In a large pot, sear the beef cubes in batches until browned on all sides. Remove and set aside.
In the same pot, add onion and garlic, sautéing until translucent.

Reduce heat and simmer for 1.5 hours or until the beef is tender.
