1 pound ground chicken
2 tablespoons olive oil
3 cloves garlic, minced
1 red bell pepper, thinly sliced
2 shallots, finely chopped
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon sugar
1 cup fresh Thai basil leaves
2 Thai chilies, sliced (optional)
Salt and pepper to taste

Directions:

Heat olive oil in a large skillet over medium-high heat.
Add garlic and shallots, sauté until fragrant, about 1-2 minutes.
Add ground chicken, break it up with a spoon, and cook until browned.
Stir in bell pepper, cook for 2 minutes until slightly softened.
Add fish sauce, soy sauce, and sugar. Mix well and cook for another minute.
