Ingredients:

  • 300g mushrooms, sliced
  • 1 broccoli, cut into florets
  • Salt, to taste
  • 1-2 cloves of garlic, minced
  • Olive oil, for cooking and toasting
  • 3 eggs, beaten
  • 50g cheese, grated
  • Bread slices
  • Italian herbs, for seasoning
  • Dry garlic, for seasoning
  • 1 tomato, chopped
  • Parsley, chopped
  • 50g mayonnaise
  • 50g Greek yogurt
  • Dill, chopped

  1. Boil water in a pot, add salt, and cook the broccoli florets for 3 minutes. Drain and set aside.
  2. In a pan, sauté garlic in olive oil. Add mushrooms and cook until tender.
  3. Add the broccoli to the mushrooms, mixing well.
  4. Pour the beaten eggs over the vegetables, cooking for 3 minutes. Cover with cheese and cook for another 3 minutes.
