Classic French Beef Stew with Red Wine and Mushrooms

  • 3 lb. Beef
  • 2 Onions (1 chopped for the stew, 1 whole for garnish)
  • 2 Carrots (1 chopped for the stew, 1 whole for garnish)
  • Dry red wine
  • 3/4 lb. Bacon
  • 1 1/2 lb. Mushrooms
  • 100 gr. Small onions
  • 6 Garlic cloves
  • 3 tbsp. Butter
  • 2 tbsp. Flour
  • 3 cups Water
  • 2 cups Dry red wine
  • 2 tbsp. Tomato paste
  • 3/4 tsp. Salt
  • 1/2 tsp. Black pepper
  • 1 tsp. Thyme
  • 3 Bay leaves



  1. Cut the beef into cubes and season with salt and black pepper.
  2. In a large pot, cook the bacon until crispy. Remove the bacon and set aside.
  3. In the same pot, brown the beef cubes in batches. Remove and set aside.
  4. In the same pot, sauté chopped onions, carrots, small onions, and garlic until softened.
  5. Add the beef and bacon back to the pot. Sprinkle with flour and stir to coat.
  6. Pour in the water, red wine, and tomato paste. Add thyme and bay leaves.
  7. Bring to a simmer, cover, and cook for about 2 hours, or until the beef is tender.
  8. In a separate pan, sauté sliced mushrooms in butter until golden brown.
  9. Add the mushrooms to the beef stew and cook for another 10 minutes.
  10. Serve the Beef Bourguignon hot, garnished with fresh parsley if desired.
