  • 2 zucchini
  • Salt and black pepper
  • 3 eggs
  • 100g (3.5 oz) cheese, grated
  • Italian herbs
  • Red paprika
  • 100g (3.5 oz) breadcrumbs
  • 50g (1.8 oz) flour
  • Olive oil for frying

For the Sauce:


  • 3 pickled cucumbers, chopped
  • 3 tablespoons Greek yogurt or sour cream
  • 2 cloves of garlic, minced
  • Dill, chopped


  1. Prep the Zucchini: Grate the zucchini and season with salt and black pepper. Let it sit for 15-20 minutes to release moisture.
