Ingredients:

  • 500g Beans
  • 2 liters Water
  • 1 Chili Pepper
  • 4 Bay Leaves
  • 3 Onions
  • 2 stalks Celery
  • 1 tbsp Tomato Paste
  • 6 cloves Garlic
  • 1 tsp Coriander
  • 1/3 tsp Black Pepper
  • 1 tbsp Salt
  • 70g Parsley, chopped

  1. Rinse the beans and soak them overnight in water.
  2. Drain the beans and place them in a large pot with 2 liters of fresh water. Add the chili pepper, bay leaves, and salt. Bring to a boil, then simmer for 1-2 hours until beans are tender.
  3. In a separate pan, heat some oil over medium heat. Sauté onions, celery, and garlic until soft. Stir in tomato paste, coriander, and black pepper; cook for an additional minute.
  4. Combine the sautéed mixture with the beans. Cook for another 10-15 minutes, allowing flavors to blend.
