For the Dough:


  • 2 cups warm water (400 ml)
  • 4.5 cups flour (540 g)
  • 1 packet yeast (10 g)
  • 1 teaspoon sugar (10 g)
  • 1 teaspoon salt (8 g)

For the Filling:

  • 200 g feta cheese
  • 1 pinch chopped parsley

For the Surface:

  • 2 egg yolks
  • 1 tablespoon milk


  1. Prepare the Dough: In a large mixing bowl, combine warm water, flour, yeast, sugar, and salt. Knead until a smooth dough forms. Cover with a clean kitchen towel and let it rise in a warm place until doubled in size, about 1 hour.
  2. Prepare the Filling: Crumble the feta cheese into small pieces and mix it with chopped parsley. Set aside.
  3. Shape the Dough: Preheat the oven to 180°C (350°F). Divide the dough into equal-sized balls and roll each ball out into an oval shape, about 1/4 inch thick. Place the rolled-out dough on a baking sheet lined with parchment paper.
