– 1 pound ground beef
– 1 teaspoon salt
– 1 teaspoon pepper
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 4 large flour tortillas
– 2 cups shredded cheddar cheese
– 1/2 cup diced tomatoes
– 1/4 cup diced red onion
– 1/4 cup diced pickles
– 1/4 cup ketchup
– 1/4 cup mustard
– 2 tablespoons vegetable oil

Instructions:

1. In a large skillet, cook the ground beef over medium heat until browned. Season with salt, pepper, garlic powder, and onion powder. Drain any excess grease.
2. Place a tortilla on a flat surface and sprinkle 1/2 cup of cheddar cheese on half of the tortilla.
3. Spoon a quarter of the cooked ground beef on top of the cheese, then add diced tomatoes, red onion, and pickles.
4. Drizzle ketchup and mustard over the ingredients and top with another 1/2 cup of cheddar cheese.
5. Fold the tortilla in half to cover the ingredients.
6. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Carefully place the quesadilla in the skillet and cook for 2-3 minutes per side, or until golden brown and the cheese is melted.
7. Repeat with the remaining ingredients to make three more quesadillas.
8. Cut the quesadillas into wedges and serve hot.
