Ingredients:

  • 6-8 flour tortillas (20cm/8″)
  • 2 cups (200g) shredded Monterey Jack cheese
  • 3/4 cup roughly chopped coriander/cilantro
  • 1 cup corn kernels (frozen thawed or canned drained)
  • Choose one filling: Beef, Chicken, or Vegetable

Quesadilla Spice Mix:

  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 2 tsp cumin powder
  • 2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)

Directions:

  1. Mix Spice Mix ingredients in a small bowl.
  2. Prepare your chosen filling using the Spice Mix.
  3. Place a tortilla on a work surface. Sprinkle with cheese, your filling, corn, and coriander. Top with more cheese. Fold in half.
