  • Whole Chicken, 3.3lb/1.5kg, taken out of the fridge 30 minutes before needed
  • Unsalted Butter, 2 tablespoons, close to room temperature
  • Garlic, 2 cloves, very finely diced or grated, plus 1 bulb extra sliced in half
  • Fresh Thyme, 1 teaspoon finely diced, plus more sprigs
  • Small Onions, 3, quartered
  • Small Lemon, 1, zested then sliced into two thin rounds
  • Salt, 1/2 teaspoon, plus more as needed
  • Black Pepper, 1/4 teaspoon, plus more as needed
  • Olive Oil, as needed
  • Chicken Stock, 2 cups / 500ml
  • Flour, 3 tablespoons
  • Honey, a squeeze (optional)
  • Lemon, a squeeze (optional)
  • Tiger Bread, 10-12 small but thick slices, or other soft white bread
  • Butter, as needed for spreading



  1. Oven Preparation: Preheat the oven to 220°C (425°F).
