Ingredients:
2 lbs chicken thighs, skinless and boneless, cut into pieces
1 tablespoon vegetable oil
1 large onion, finely chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons tomato paste
1 can (14 oz) diced tomatoes
4 cups chicken broth
1 cup natural peanut butter
1 teaspoon cayenne pepper (adjust to taste)
1 large sweet potato, peeled and cubed
Salt and black pepper to taste
Chopped cilantro and roasted peanuts for garnish

Directions:
Heat the oil in a large pot over medium-high heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set aside.
In the same pot, add the onion, garlic, and ginger. Cook until the onions are translucent.
Stir in the tomato paste and cook for a minute before adding the diced tomatoes, chicken broth, peanut butter, and cayenne pepper. Bring to a simmer.
Return the chicken to the pot, cover, and let it simmer for 20 minutes.
Add the sweet potato cubes to the stew, and continue to simmer, covered, for an additional 20-25 minutes or until the sweet potatoes are tender and the chicken is cooked through.
Season with salt and pepper to taste. Garnish with chopped cilantro and roasted peanuts before serving.
