- 2 tbsp Olive oil
- 1 medium Onion, chopped
- 1 Carrot, grated
- 2 lb / 900g white Cabbage, shredded
- Salt and black pepper to taste
- 1/2 tsp Oregano
- 1/2 tsp Sweet Paprika
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Dry Parsley
- 5-6 Eggs
- Pinch of salt
- 1 tbsp All-purpose Flour (optional)
- 1 tbsp Olive oil (for frying)
- Fresh parsley (optional)
- Manchego cheese (optional)
Directions:
- Heat 2 tablespoons of olive oil in a large pan over medium heat.
- Add the chopped onion to the pan and fry for about 5 minutes until translucent.
- Add the grated carrot to the pan and fry for another 2 minutes.
- Add the shredded cabbage to the pan and fry for 10-12 minutes over medium heat, stirring occasionally.
- Season with salt, black pepper, oregano, sweet paprika, garlic powder, onion powder, and dry parsley. Mix well.
- In a large bowl, beat the eggs with a pinch of salt.
- Add the cooked cabbage mixture to the eggs and mix well. If desired, add 1 tablespoon of all-purpose flour for extra binding.
- Heat 1 tablespoon of olive oil in a clean pan over medium heat. Pour in the egg and cabbage mixture and fry for about 2 minutes until the bottom is set.
- Transfer the pan to a preheated oven at 400°F/200°C and bake for 4 minutes.
- Optionally, add Manchego cheese on top and finish under the broiler for 1 minute until the cheese is melted.
- Sprinkle with fresh parsley and serve hot.
