  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 1 Carrot, grated
  • 2 lb / 900g white Cabbage, shredded
  • Salt and black pepper to taste
  • 1/2 tsp Oregano
  • 1/2 tsp Sweet Paprika
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Dry Parsley
  • 5-6 Eggs
  • Pinch of salt
  • 1 tbsp All-purpose Flour (optional)
  • 1 tbsp Olive oil (for frying)
  • Fresh parsley (optional)
  • Manchego cheese (optional)

Directions:

  1. Heat 2 tablespoons of olive oil in a large pan over medium heat.
  2. Add the chopped onion to the pan and fry for about 5 minutes until translucent.
  3. Add the grated carrot to the pan and fry for another 2 minutes.
  4. Add the shredded cabbage to the pan and fry for 10-12 minutes over medium heat, stirring occasionally.
  5. Season with salt, black pepper, oregano, sweet paprika, garlic powder, onion powder, and dry parsley. Mix well.
  6. In a large bowl, beat the eggs with a pinch of salt.
  7. Add the cooked cabbage mixture to the eggs and mix well. If desired, add 1 tablespoon of all-purpose flour for extra binding.
  8. Heat 1 tablespoon of olive oil in a clean pan over medium heat. Pour in the egg and cabbage mixture and fry for about 2 minutes until the bottom is set.
  9. Transfer the pan to a preheated oven at 400°F/200°C and bake for 4 minutes.
  10. Optionally, add Manchego cheese on top and finish under the broiler for 1 minute until the cheese is melted.
  11. Sprinkle with fresh parsley and serve hot.
